It's a real privilege to run a coffee shop. Not only do we get to serve great coffee, but we also get to share a lovely space where customers can come and congregate.

But alongside that privilege is the responsibility that comes with serving people something that they are actually going to consume. From day one, food safety and hygiene has taken top priority in how we run Copper + Straw. There can't be any shortcuts; staff are trained and re-trained, guidelines are in place, we audit our own practices, and we review and monitor our performance in monthly management meetings.

We take our lead from Public Health - we know coffee, they know health - so we comply with their standards and regulations and implement them meticulously. When you walk through our door you place your trust in us. You expect us, and rightly so, to create a safe environment where you can enjoy a coffee and meet friends and colleagues. That trust is precious. And hard earned.

There's been a lot of talk this week about the hospitality industry not toeing the line. There's a lot of confusion out there. And Worry. And frustration. But understanding and implementing public health guidelines is embedded in the fabric of the hospitality industry. It's fundamental to what we do. Our business depends on it, and our customers deserve no less. It's a fabric that will not come undone.
