Copper + Straw Comes to Palmerston Park

In late 2025, we opened our fourth coffee shop in Palmerston Park. It’s a beautiful setting and one we feel incredibly fortunate to call home.

Copper + Straw started with one small shop on Bray Main Street in 2018. Since then, we've grown gradually, adding two shops in Dublin city centre and, more recently, our own production kitchen. But expansion has never really been about chasing growth for growth's sake. We genuinely enjoy creating coffee shops and we only open in places that feel right.

When the opportunity came up in Palmerston Park, we didn't have to think about it for very long. It's a beautiful park and one that is clearly cherished by the local community. We felt privileged to be given the opportunity to operate there and knew we wanted to create something that would complement the park and become part of the fabric of the area.

Opening a new coffee shop is exciting, but it's also challenging. There are always countless decisions to make, from the design and layout to equipment, menus and recruiting a new team. No two shops are the same, and every location has its own character. We wanted Palmerston Park to feel relaxed, welcoming and true to what Copper + Straw is all about.

Like all of our shops, Palmerston Park is built around speciality coffee. We rotate coffees throughout the year, bring in guest roasters from around the world and spend a lot of time tasting, dialling in and training our teams. We believe that great coffee should be approachable and that there should always be something new to discover.

What we've enjoyed most since opening, however, has been getting to know the community. One of the great privileges of running coffee shops is becoming part of people's daily routines. Seeing familiar faces each day, getting to know our regulars and working with local groups and organisations are the things that make the long hours and challenges worthwhile.

We're still a small, independent Irish business and we never take for granted the fact that people choose to spend part of their day with us. The welcome we've received in Palmerston Park has been incredibly warm and we're very grateful for it.

Thank you to everyone who has called in for a coffee, met friends in the park, brought the dog along or simply made us part of their routine. We hope to be here for many years to come.
